It is not in the manual. there has to be one. i would would figure if the is a short cut for volume (-) than one should exist for pan.

well there are a few that are not in the short cut list, but do exist. Its a valid question.

It's not really a quick key, but if you hold down command+control and click on the pan control it will switch to the pan automation playlist.
